Amarone della Valpolicella Classico

Amarone della Valpolicella Classico known as Italy’s king of red wines is one of the richest, intense wine. It is a fruity wine, that carries the taste of black cherry with hints of prune. It is settling in the mouth, and delightfully pleasing. It is dry, warm, and full bodied.
The main varieties used to produce Amarone are the (late-picked) grapes Corvina (for aroma and richness), Molinara (for balance and smoothness) and Rondinella (for colour and tannin).. An assortment of other varieties can be used to round out the blend, including Corvinone, Molinara and Croatina. Amarone is made from grapes that have been air-dried for several months prior to being vinified. It’s unique because of its wine-making technique called ‘appasimento’. The bunches of grapes are dried on straw mats in lofts or attics for four months where they lose about thirty percent of their original weight. This highly concentrates the sugars, the fruit and the aromas.
At its best, Amarone is a rich, sensual wine unlike any other..The best vintages in recent years are 2000, 2001, 2003.
Regarding food paring Amarone is a good match with Osso Bucco and by no means Amarone should be in any cellar to make it complete.
