Vue de monde relocated to the 55th floor of Melbourne’s iconic Rialto building, challenging the notion that great dining cannot exist at great heights and finally bringing a ‘view’ to the Vue de monde experience. A pared back, sophisticated space, the design reflects on Australia’s history, referencing Melbourne’s glory days during the gold rush and other cultural icons such as the out back dunny! A stunning neon art piece by seminal conceptual artist Joseph Kosuth interpreting one of Charles Darwin’s sketches forms the back drop for the restaurant tog ether with sweeping views across the city and beyond.

MONA is the dream of professional gambler, entrepreneur and philanthropist David Walsh, and is designed by Walsh and architect Nonda Katsalidis to shock and offend, challenge, inform, entertain and provoke. MONA sits on a 3.5 hectare peninsular curving into the Derwent River in Tasmania. What was previously a small collection of antiquities has been transformed into a three-level, underground, multimedia museum of installations, paintings, light shows, mummies and African art, all of which will be free to the public. The exterior is concrete and Corten steel panels with roof gardens, a tennis court and walkways. The interior is no neutral “white cube” and is designed to encourage visitors to lose themselves in the slow reveal of the galleries.

Make a reservation at Saffire

Saffire is a coastal sanctuary on Tasmania’s East Coast, at Freycinet Peninsula in a fully protected national park. Saffire overlooks the wide expanses of Great Oyster Bay, where migrating whales and dolphins come to play; calamari and squid in-season spawn in the rocky outcrops; local farms produce fresh, succulent oysters in some of the world’s cleanest waters; and fishing boats and trawlers bring in their daily catch of crayfish, scallops and deep sea fish, dripping and salty-sweet straight from the ocean. Designed by Tasmanian architects Morris Nunn and Associates, the buildings are conceptually organic, reflecting the surrounding environment. Saffire evokes a connection to the sea, through references to waves, sea creatures, sand dunes and a flowing, organic form.

The interior design for Saffire by Chhada Siembieda is inspired by the natural environment, a pristine coastal landscape. The purity of the environment is reflected in a fresh, modern, relaxing and uncontrived design style. All of the 20 suites are featuring the best in design and furnishings and capturing the unique nature of the surrounding coastline with the magnificent views of the Hazards Mountains, crystal-clear blue waters and white sandy beaches. The furnishings feature an eclectic mix of traditional and contemporary, with locally made timber pieces alongside mid-century classics such as chairs designed by Charles and Ray Eames and Herman Miller.
Its Spa treatments and beauty grooming are done by hand-selected some of the world’s best skin and body care products.

The Prince is a 40-room hotel housed within The Prince of Wales property, is located in cosmopolitan St Kilda neighborhood, with views of picturesque Port Phillip Bay. The Prince settles in to its second decade still a leading force – merging cutting-edge glamor with laid back luxe feel.

When you enter the lobby you see a bluestone reception desk floating in front of an impressive Dale Frank painting. Spot light vases, designer couches and an original Le Chaise by Charles and Ray Eames, serve as visual and functional pieces within the space. Yet the rooms offer warmth and texture, are flooded with natural light and are set with an eclectic mix of furniture, lighting and objects and as hair and body products they have the world renowned Australian company, Aesop.

The Prince Deck is located by the pool offering spectacular views over the rooftops of St Kilda and out over the Bay. You can dine exceptionally at Circa, mingle with the locals at The Prince Bar, mix with subversives’ underground at `Mink’ or take in some of the best bands and musicians on offer in the Bandroom.

Il Fornaio is located in the heart of the cafe society of St Kilda. The French inspired bakery/cafe continues to produce traditional French and Italian styled sweet and savory pastries and exceptional breads. il Fornaio is well equipped to cater to the retail and wholesale markets within the industrial urban interior that is reminiscent of the old `workshop’ bakery of a past era. You can relax over a leisurely breakfast, lunch or all day snacks – or pick up a delicious treat from the fridge for dinner.

Kirketon Hotel is located in the heart of Sydney’s most vibrant suburb, Darlinghurst. Positioned on the doorstep of Sydney’s café, restaurant, bar and nightclub district and only moments walk to Oxford Street and Kings Cross Station. Originally opened in 1999 with a Burley Katon Halliday design, the Kirketon Hotel and associated Salt Restaurant claimed the mantle of Australia’s preeminent boutique hotel. With the stark minimalist style
of its day and highly inflated room rates the brand flourished .

Acquired by Eight Hotels in late 2003, the Kirketon maintained its reputation as an iconic boutique hotel and relaunched after refurbishment. The hotel’s 40 new suites caters to all accommodation needs and feature
comfort and luxury. In addition to the hotel the recently opened Kirketon Brassiere and Sydney Wine Room located on the ground floor offers guests and locals alike an authentic Darlinghurst culinary and nightlife experience.
